
Baked Apple-Stuffed Acorn Squash
Ingredients
- 2 medium acorn squash
- 2 Golden Delicious apples or any other baking variety
- 1/4 cup white wine or water
- 1/4 cup sugar
- 1/2 teaspoon cinnamon
- 2 tablespoons butter
- 4 teaspoons ground almonds
Instructions
- Preheat the oven to 350 degrees F. Put about 1 inch of water in a baking dish. Set aside.
- Wash the acorn squash and cut them in half. Scoop out the seeds and slice a thin piece off of the bottom of each half, being careful not to make a hole in the squash. (This slice will give the squash a flat base so it will sit upright in the baking dish.) Place the squash in the baking dish and set aside.
- Peel and core the apples and cut into thin slices.
- In a large skillet, combine the wine or water and the sugar over moderate heat. Add the apples and cook until they are crisp-tender and the liquid is slightly reduced, about 2 minutes. Sprinkle the cinnamon on top of the apples, swirl in the butter and continue to cook until the sauce is thick, about 2 to 3 minutes.
- Place an equal portion of the apple mixture into each of the 4 squash halves and bake until a knife easily pierces the meat of the squash, about 1 hour. With 10 minutes to cook, sprinkle 1 teaspoon of the almonds on top of the apple mixture in each squash half.
