
Portuguese Lobster Boil
Use white wine to give the seafood a light flavor, but you can simmer the mixture in your favorite beer.
Ingredients
- 1/4 cup olive oil
- 1 medium onion chopped
- 2 red and/or green bell pepper diced
- 1 lb linguica sausage sliced diagonally
- 3 cloves garlic chopped
- 14.5 oz can diced tomatoes
- 1 cup white wine
- 1.5 lb lobster
- 1 lb small red potatoes
- 1.5 lb littleneck clams
- 1 lb shrimp peeled & deveined
- 4 ears corn cut into 2"" chunks
- 3 Tbs chopped fresh parsley
Instructions
- In large Dutch oven over medium high heat, cook olive oil 30 sec. Add onions, bell peppers and linguica sausage; cook 5 min. or until vegetables are softened.
- Add garlic; cook 1 min. stirring frequently. Add diced tomatoes, white wine and 1/2 c water; bring mixture to a boil. Add lobster and red potatoes. Cover and cook 20 min.
- Add clams, shrimp and corn. Cover and cook 5 min. or until clams open and shrimp turn pink. Season with salt and pepper, if desired.
